Spicy Seitan and Vegetable Stroganoff

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

4 large cloves garlic -- peeled & minced

1 small jalapeno pepper -- minced

1 cup coarsely chopped onion -- (1 large onion)

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

3/4 cup coarsely chopped red bell pepper -- (1 med pepper)

3/4 cup coarsely chopped green bell pepper -- (1 med pepper)

1 cup coarsely chopped zucchini -- (1 sml zucchini)

1/2 pound seitan -- thinly sliced (2 cups)

1 28 oz can ground peeled tomatoes with juice

1/4 teaspoon salt

10 Greek olives -- pitted & chopped

12 ounces wide egg noodles

finely grated Parmesan cheese for serving

 

Put a large pot of water on to boil.

Heat the oil in a large skillet over medium heat. Saute the garlic, jalapeno,

onion, oregano, and thyme until the onion is wilted, 2 to 3 minutes. Stir in

the red and green peppers and zucchini, and cook until tender, 3 to 4 minutes

more.

Stir in the seitan, tomatoes and their juice, salt, and olives. Reduce the heat

to a simmer and cook, stirring occasionally.

Cook the noodles in the boiling water until al dente, 8 to 10 minutes. Drain

well and transfer to a large serving dish.

Top the noodles with half the sauce. Serve the rest on the side, along with

Parmesan cheese if you like.
