Herby Stuffing

Amount Measure Ingredient -- Preparation Method

1 medium onion

6 small celery stalks

1 tablespoon fresh parsley -- chopped

1 tablespoon fresh sage -- chopped

1 tablespoon fresh thyme -- chopped

6 tablespoons olive oil

1 small loaf whole grain bread -- diced

3 tablespoons pecans -- roughly chopped

3 tablespoons cashews -- roughly chopped

3 tablespoons brazil nuts -- roughly chopped

soy sauce or tamari to taste

a little veg stock or water to bind

 

In a medium bowl, combine all the ingredients. Mix well, adding a little

stock or water to moisten the mixture. Press the mixture into a greased loaf

pan.

Bake at 350° F for 30-40 minutes. Allow the stuffing to cool a little

before turning it out.

Serve it cut into slices.
