Guest guest Posted October 3, 1999 Report Share Posted October 3, 1999 * Exported from MasterCook * Alphabet Vegetable Soup Recipe By :Vegetarian Times Low Fat & Fast Pasta Serving Size : 4 Preparation Time :0:00 Categories : Veg Times Low Fat & Fast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 14.5 oz cans vegetable broth 2 cups water 3/4 cup tricolor or regular small alphabet pasta -- (4 ounces) 1 16 oz package frozen soup vegetables with potatoes, carrots, peas, etc. 3/4 teaspoon dried thyme 1/4 teaspoon salt -- or to taste 1/4 teaspoon freshly ground black pepper garlic croutons -- (optional) Bring the broth and water to a boil in a large saucepan. Stir in the pasta, reduce the heat to low, and simmer, uncovered, for 4 minutes. Meanwhile, thaw the vegetables in the microwave oven on high power for about 3 minutes or under warm running tap water. Add the vegetables, thyme, salt, and pepper to the broth and simmer, uncovered, for 5 minutes.
