Vegetarian Chili

Amount Measure Ingredient -- Preparation Method

Olive oil spray

OR up to 1-tablespoon olive oil

1 large onion -- chopped

1 rib celery -- sliced thin

8 ounces sliced mushrooms

1 teaspoon minced garlic

1 tablespoon chili powder -- or to taste

22 ounces canned seasoned chili beans -- undrained

16 ounces cooked black beans -- rinsed and drained

3 16 oz cans diced tomatoes

1/8 teaspoon cinnamon

1/4 teaspoon dried oregano

2 cups frozen vegetarian crumbles

(such as Green Giant Harvest Burger for

recipes)

or chopped vegetarian burgers

OPTIONS:

Hot sauce

Shredded low-fat or regular sharp Cheddar

cheese

Low-fat or regular sour cream

Crushed fat-free or regular tortilla chips

 

Coat a nonstick soup pot with cooking spray; heat over medium heat. Saute onion

until soft. Add celery; saute for 2 minutes. Add mushrooms; cook until they

release their liquid and that liquid evaporates, stirring frequently. Stir in

garlic; cook for a few seconds.

Sprinkle with chili powder; stir. Add beans, tomatoes, cinnamon and oregano.

Bring to a boil. Stir in vegetarian crumbles. Return to a boil. Simmer,

uncovered, for 30 minutes or until flavors blend. If desired, season with hot

sauce. At the table, top with cheese, sour cream and tortilla chips.

NOTES : This low-fat chili is a big hit at potlucks, and no one ever guesses

that it’s meatless. If you can’t find the crumbled meat substitute, chop

vegetarian burger patties into small pieces.
