I didn't have time this morning to get it fixed. Let cool, then peel and cut into slices 1 1/2-inch thick. In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat about 5 minutes. Reduce heat and add sweet potatoes to skillet. Cook gently; tossing lightly until sweet potatoes are glazed. Sprinkle with coconut before serving. Note: Canned yams can be used in place of sweet potatoes. Assoc. : 0 0 0 0 0 * Exported from MasterCook * Hawaiian Yam Bake Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 large Sweet potatoes or yams -peeled and cut into 2 " chunks 2 cups Pineapple chunks 1 cup Banana -- sliced 2 cups Hearts of palm -- cut into 2 " chunks 2 cups Tempeh -- cut into 1 " chunks 2 cups Dried lentils 3 cups Vegetable stock 1/2 cup Honey or other natural sweetener 2/3 cup Prepared spicy mustard 1/2 cup Cider vinegar Preheat oven to 250 deg. Combine all ingredients in a large roasting pan or casserole dish. Place in oven and bake, covered, for 2 hours. Stir occasionally and serve hot. Hint: For a sweeter taste, use apple juice to replace 1/2 of the vegetable stock.
