Hominy and Corn Stew

Amount Measure Ingredient -- Preparation Method

1 pound small dried red beans or black beans

3 tablespoons canola or corn oil

4 cups onion -- chopped

6 large garlic clove -- minced

1/4 cup chili powder

2 teaspoons cumin seed

1 up to 3 jalapenos, chopped fine (include

the seeds if you like more heat)

1/3 cup masa harina or cornmeal

4 carrots -- chopped

5 1/2 cups water

8 cups canned hominy, drained of about half its

liquid

12 ounces light colored beer

kernels from 4 ears corn (about 2 2/3

cups)

1 teaspoon salt, more if you like

freshly ground black pepper to taste

1/4 cup chopped cilantro

 

Soak the beans overnight, or use the quick-soak method: Boil the beans in plenty

of water for 5 minutes. Remove the pan from the heat, then let the beans soak

for 1 hour.

Drain the soaked beans, and rinse them well w/ cold water.

In a large saucepan, heat the oil over medium heat. Add the onions, and cook

them, stirring occasionally, for 10 minutes. Add the garlic, chili powder,

cumin, and jalapenos, and cook, stirring often, for 5 minutes.

Add the beabs, masa harina or corn meal, carrots, water, hominy, and beer.

Bring the mixture to a boil, then turn the heat to low. Simmer the stew,

stirring occasionally, for 1 1/2 hours or until beans are tender.

Add the fresh corn, and cook 10 minutes more. Add the salt and pepper to taste.

Serve the stew sprinkled with chopped cilantro.

NOTES : Living in Michigan means a short season for corn so I use a 10 oz pkg of

frozen corn and it works well.
