Guest guest Posted October 20, 1999 Report Share Posted October 20, 1999 I love Thai food and since Karen is " out of action " , thought I'd format this. * Exported from MasterCook * Thai Noodles in Peanut Sauce Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces thin spaghetti 1/4 cup smooth peanut butter 3 tablespoons soy sauce 1 tablespoon rice wine or dry sherry 1 tablespoon rice vinegar 2 teaspoons sugar pinch chile pepper 1 teaspoon garlic -- minced 2 scallions -- thinly sliced 1 small cucumber -- peeled and diced Cook the pasta in lightly salted boiling water. Drain and rinse under cold water. Place the peanut butter, soy sauce, rice wine, rice vinegar, sugar, pepper, and garlic in a food processor. Process until very smooth. Toss the noodles with the peanut sauce, scallions, and cucumbers.
