Guest guest Posted October 21, 1999 Report Share Posted October 21, 1999 * Exported from MasterCook * Chocolate Swirl Chocolate Chip Banana Cake Recipe By :Andrew Schloss with Ken Bookman Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound unsalted butter 2 cups sugar 6 very ripe banana 1/2 cup sour cream (regular or reduced-fat but not fat-free) 2 teaspoons vanilla extract pinch salt 1 1/2 teaspoons baking soda 1 teaspoon baking powder 4 cups flour 3 ounces semisweet chocolate chip 3 tablespoons cocoa powder 1 tablespoon ground cinnamon Preheat oven to 350F. Grease a 10 " bundt pan or tube pan. Set aside. In a large, heavy saucepan, melt the butter over medium heat. Mix in sugar and add bananas, mashing them with the back of a fork or wooden spoon. Don't worry if the bananas remain lumpy. Mix in the sour cream, vanilla, salt, baking soda, and baking powder. Stir in flour and beat until all of it is well incorporated and batter is thick. Stir in the chocolate chips. Sprinkle the cocoa and cinnamon over the surface of the batter and swirl into the batter with no more than 5 strokes. Pour and scrape the batter into the prepared pan and bake for 50 minutes, or until a tester inserted into the crack of the cake comes out clean. Cool on rack for 10 minutes. Cover with a rack and invert. Remove pan. Cool right side up on rack.
