Cauliflower Kugel

Amount Measure Ingredient -- Preparation Method

1 Large Head Cauliflower

4 Cups Water

Salt To Taste

2 Large Onions -- Diced

1/4 Cup Vegetable Oil Plus Oil For Greasing

Freshly Ground Pepper -- To Taste

2 Large Eggs -- Beaten

2 Tbsp Matzo Meal -- Or

Wheat Germ

2 Tbsp Cornflake Crumbs

 

Separate the cauliflower into large florets. Bring the water to a boil;

add the salt and cauliflower. Simmer uncovered until tender. Drain.

Place in a bowl and mash. Saute the onions in the vegetable oil until

soft and lightly browned. Add the onions to the cauliflower; add the

pepper, eggs and matzo meal or wheat germ. Place in a greased 9 " square

pan and sprinkle with the cornflake crumbs. Bake at 350 degree for 45

minutes or until golden.
