Guest guest Posted October 21, 1999 Report Share Posted October 21, 1999 Here's a dish I've made for over 25 years. We make this for breakfast, lunch or dinner. Letcho 4-6 medium potatoes, peeled and diced into large size pieces 1 medium onion chopped 1 green pepper (diced into medium size pieces) 6-8 mushrooms (cut into large pieces) 2 medium fresh tomatoes (diced into very large pieces) 4-6 eggs or equivalent portion of egg replacement 1-2 tbsp. oil (more if needed) Salt, pepper, to taste Optional (paprika garlic powder or cayenne powder) Heat oil in large wok type frying pan Peel & dice potatoes and brown in oil over medium heat Add onions and green pepper and continue cooking Add salt, pepper & paprika (garlic powder too if desired) Add mushrooms and continue cooking When potatoes are almost cooked but still firm add the chopped tomatoes At this point you can add more salt & pepper if desired In a bowl, slightly beat the eggs (or egg replacer) Pour into a separate frying pan and scramble Fold egg mixture over potato mixture and stir gently to mix.
