It's also very quick and easy. * Exported from MasterCook * Soybean Stroganoff Recipe By :Barb Bloomfield Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup onions -- diced 8 ounces fresh mushrooms -- chopped 1/2 teaspoon olive oil 1 tablespoon cornstarch 1/8 teaspoon black pepper 3 tablespoons soy sauce 2 cups cooked soybeans 1 cup soymilk or soy yogurt In a medium skillet, saute the onions and mushrooms in the olive oil until soft. In a bowl or cup, dissolve he cornstarch and black pepper in the soy sauce. Add the paste to mushrooms and onions, and stir well until it begins to bubble, and a smooth gravy is formed. Add the soybeans and soymilk or soy yogurt, and heat only to a simmer. Don't boil the sauce or it may separate into curds and whey. Serve over pasta. Last time, I used Nasoya sour cream made from tofu and it was delicious. I've also used black barley instead of pasta with good results. And I usually use canned soybeans, rinsed and drained. Nutr.
