Guest guest Posted October 22, 1999 Report Share Posted October 22, 1999 Since it's so quiet I thought that I would share some more recipes that we've liked.<G> Stacy * Exported from MasterCook * Oven Fried Gluten Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups washed gluten 1 onion -- chopped fine 3 cloves garlic -- minced 1/4 cup oil 1/2 teaspoon marjoram 1/2 teaspoon thyme 1/4 teaspoon sage 1/4 cup nutritional yeast 1 teaspoon salt 1 tablespoon soy sauce 2 tablespoons peanut butter CRUMB MIXTURE 1 3/4 cups bread or cracker crumbs 1/4 cup wheat germ 1 teaspoon garlic powder 2 tablespoons nutritional yeast 1/2 teaspoon salt 1/2 teaspoon paprika 1/4 teaspoon pepper or thyme Cook onions and garlic in oil til tender. When soft add the other ingredients. Work onions and seasoning into gluten. Pull off pieces and stretch flat 4 " x2 " x1/2 " thick. Roll in crumb mixture and place on well oiled cookie sheet. Bake at 350 degrees for 15 minutes, turn pieces over. Bake 15-20 minutes more til golden brown. Don't overbake. - - - - - - - - - - - - - - - - - - NOTES : The first time I made this I started totally from scratch with the wheat. It was a huge job to get the gluten. Then I found out that you could buy instant gluten and just add water. It sure made it easier! * Exported from MasterCook * Vegetarian Burger Mix Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup chickpeas 1/4 cup soybeans 1/4 cup lentils 1/4 cup peanuts 1/4 cup sunflower seeds 1/4 cup sesame seeds 1/4 cup oats 1/4 cup cornmeal 1/4 cup wheat germ 2 tablespoons soy flour 1 tablespoon nutritional yeast 2 tablespoons parsley 1 teaspoon soda 1 1/2 teaspoons salt Grind nuts, beans, seeds, and oats in blender to consistency of coarse flour. Process only 1/2 cup at a time. Combine mixture with remaining ingredients and mix well. It is great for throwing dinner together in a hurry. * Exported from MasterCook * Burger Mix Burgers Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Burger Mix, see recipe 1/3 cup hot water dash soy sauce Combine burger mix with water and a little soy sauce. Mix well and let stand 15 minutes. Shape into 2 patties. Heat heavy skillet and cover with thin layer of oil and cook 3 - 5 minutes til brown. Turn, cover pan and cook 5 minutes longer steaming interior and browning bottom. Serve as you would a hamburger. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Tofu Pot Pie Recipe By : New Farm Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup flour 1 tablespoon nutritional yeast 1 teaspoon salt 1/2 teaspoon garlic powder 2 cups tofu -- cut in 1/2 " cubes 2 tablespoons oil 1 cup onion -- chopped 1/2 cup celery -- sliced vegetables of your choice 1 recipe Golden Gravy -- see recipe 1 double pie crust Combine the flour, yeast, salt and garlic powder in small bowl. Add tofu and stir to coat. Saute in oil til browned. Add the onions and celery to pan and cook til onions are soft. Add other vegetables and mix with the gravy. Place in pie crust lined pie dish. Add pastry crust to top (or mashed potatoes or crushed corn flakes or biscuit dough. Stir in the yeast, then add the oil. Cook a few minutes til bubbly, then add water and cook, whisking til it thickens and bubbles.
