Maple Baked Pears

3 medium (7oz each) ripe pears

2 Teaspoons grated lemon peel

1 tablespoon fresh lemon juice

2 tablespoons pure maple syrup - plus 2 teaspoons

ground nutmeg

1/3 cup reduced fat ricotta cheese or part skim

 

Halve pears lenghwise, leaving stem attached to one half. With a melon baller,

carefully scoop core from each half. Arrange cut side up with thick bart toward

the outside in a 9 1/2 inch glass pie plate; drizzle w/ lemon juice.

Fill each cored section w/ about 1 tsp maple syrup. Srinkle lightly w/ nutmeg.

Microwave on high, uncovered, 5 minutes. Rotate plate a half turn; microwave 2

minuutes more or until pears are very tender.

Meanwhile, stir lemon peel and ricotta together in a small bowl.

Remove pears from oven and spoon juices in cored sections over edges of pears.

Top each w/ cheese; drizzle w/ remaining 2 teaspoons syrup. Serve warm or at

room temperature.
