Light White Sauce

2 teaspoons oil

1/2 onion -- finely diced

4 tablespoons all-purpose flour

1 1/2 cups milk

1/2 cup vegetable stock

2 teaspoons white miso -- blended to a paste with 1 tbs water

white pepper

 

Heat the oil in a saucepan and cook the onion over a low heat with the lid on

the pan for 2-3 minutes. Add the flour and stir over a low heat for 1 minute.

Add the milk and vegetable stock and cook, stirring constantly, over a medium

heat until mixture comes to a boil. Reduce heat and cook, stirring, for another

minute. Remove from the heat and season to taste with the miso mixture and the

pepper
