Chili Jam

2 tablespoons olive oil

1 tablespoon yellow mustard seeds

5 fresh large red chillies -- seed, finely slice

1 onion -- finely sliced

2 teaspoons lemon zest

1 cup firmly packed brown sugar

1 cup malt vinegar

 

For the chili jam; combine all the ingredients and a half cup of water in a

saucepan and stir over low heat until the sugar dissolves. Simmer uncovered for

about thirty minutes, or until the mixture becomes thick and sticky.
