Guest guest Posted October 26, 1999 Report Share Posted October 26, 1999 * Exported from MasterCook * Savory Zucchini Pie Recipe By :Ann Marshall (ed) Serving Size : 6 Preparation Time :0:00 Categories : Easy Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray 1 1/2 cups whole-wheat flour 1 1/2 teaspoons baking powder 1 small onion -- finely chopped 2 cups coarsely grated zucchini 3 large eggs -- lightly beaten 1/2 cup lowfat cottage cheese 3/4 cup skim milk 2 tablespoons finely chopped parsley 1/4 teaspoon dry mustard 1/4 teaspoon ground nutmeg 1 cup shredded lowfat Cheddar cheese 1 tablespoon sesame seeds Preheat oven to 350F (180C). Lighly spray a 9-inch dish with cooking oil. Combine the flour, baking powder, onion, zucchini, eggs, cottage cheese, milk, parsley, mustard and nutmet in a large bowl. Mix together until evenly combined. Pour mixture into the prepared dish. Sprinkle with cheese and seeds. Bake until puffed, golden brown and set, 40 to 50 minutes. Cool on a wire rack for 5 minutes. Cut into wedges and serve. Variation: up to one cup cooked and crumbled " ham " or " sausage " may be added with the eggs.
