Guest guest Posted October 26, 1999 Report Share Posted October 26, 1999 and vegemite spread. appetizer or snack. * Exported from MasterCook * Tomatoes and Lemon Mushrooms on Wholegrain Toast Recipe By :Ann Marshall (ed) Serving Size : 2 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups mixed button and small cap mushrooms 1 lemon -- juiced 1 tablespoon finely chopped parsley or snipped chives -- optional freshly ground black pepper -- to taste 2 large tomatoes 4 warm slices wholegrain toast (1/4-inch thick) 2 teaspoons margarine 1 teaspoon Vegemite® yeast extract spread parsley sprigs -- for garnish lemon slices -- for garnish Clean the mushrooms with a soft brush and trim the stems. Place mushrooms in a small, nonstick frying pan. Add lemon juice. Cover and cook over medium heat until tender, about 5 minutes (do not over cook). Stir in the chopped parsley. Season with pepper. Preheat broiler. Adjust the rack so that the pan is 4 to 6 inches from the source of heat. Line broiler pan with foil. Cut tomatoes in half and sprinkle the cut surfaces with pepper. Place the tomatoes cut side up on the broiler pan and broil until hot and starting to soften, about 5 minutes. On each slice of bread, spread with a portion of the margarine, then with a portion of the vegemite. Top each slice with a tomato half, then spoon on the mushrooms, dividing equally. Garnish with the parsley and serve. Variation: substitute lime or other citrus.
