Mexican Plum Pie

1 1/2 cups sugar - to 2 cups

1 30 oz can pitted plums

8 flour tortillas

butter

4 teaspoons brown sugar

1 teaspoon cinnamon

1/4 cup grated semisweet chocolate

1 8 oz package sour cream

 

Place plumms in saucepan. Sprinkle sugar over plums. Let stand until sugar is

dissolved and juice forms. Bring plums and juice to a boil and simmer untill

tender. Cool. While hot mixture is cooling, butter both sides of tortillas and

arrange on large baking sheets. Combine brown sugar and cinnamon and sprinkle

over tortillas. Bake at 350F for 15 minutes. (Tortillas can be turned and

sprinkled with additional sugar and cinnamon halfway through baking.)

To serve, sprinkle chocolate on each tortilla. Spoon plums and sauce over

chocolate. Top with a dollop of sour cream. Garnish with more chocolate.

Exact measurements are not a must; adjust sweetness to individual taste.
