Wild Mushroom Stuffing

 

Recipe By : adapted from Weight Watchers Magazine, Nov-Dec 1997

1/4 cup reduced calorie stick margarine

1 pound assorted fresh wild mushrooms -- chopped

--such as shiitake, crimini and oyster

2 cups chopped onion

1 1/2 cups chopped celery

1 cup chopped red bell pepper

2 1/2 teaspoons rubbed sage

3/4 teaspoon salt

1/2 teaspoon pepper

1 16 oz loaf day-old French bread -- cut into 1/2 " cubes

2 1/4 cups imitation chicken broth

nonstick cooking spray

 

1. Preheat oven to 325°F.

2. Melt margarine in a large nonstick skillet over medium-high heat. Add

mushrooms and next 3 ingredients; sauté 7 minutes. Remove from heat; stir in

sage, salt, and pepper.

3. Combine mushroom mixture and bread cubes; gradually add broth, tossing gently

to coat. Spoon mixture into a 13 x 9 inch baking dish coated with cooking spray.

Cover and bake at 325° for 30 minutes. Uncover and bake an additional 20

minutes.

 

Yield: 12 servings (serving size: 1 cup).
