Apple Calico Stuffing

2 cups apple cides OR apple juice

1/2 cup chopped celery

1 1/2 cups chopped red apples (varieties especially

good to incude are Empire, Gala, Golden

Deliciuos, Ida Red, Jonagold, Jonathon,

McIntosh, or Rome)

2 cups dry bread cubes

2 cups crumbled corn bread

1/2 cup shredded carrot

1/2 cup sliced green onions

1/4 teaspoon salt

1/8 teaspoon pepper

1 teaspoon sage

vegetable cooking spray

 

Place the cider and celery in a medium saucepan. Over medium heat, simmer

mixture for 3 minutes. Remove from heat; stir in remaining ingredients, mixing

until combined. Place in a 1 1/2 qt baking dish coated with cooking spray;

cover.

Bake at 350 degrees for about 45 minutes or until thoroughly heated. Makes 8

1/2-cup servings.
