Stuffing

 

Recipe By : The Dreaded Broccoli Cookbook

1 cup onion -- chopped

1/2 cup celery -- chopped

3 cups sliced firm vegetables

(carrots, garlic, mushrooms, etc)

1 tablespoon olive oil

1 cup vegetable broth

1 bunch Italian parsley -- chopped

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon oregano

1 teaspoon freshly ground black pepper

1/2 teaspoon fennel seed

10 cups bread crumbs

 

Slice all the vegetables in a food processor. Heat the oil in a large

nonstick skillet over medium heat. Add the vegetables and saute, stirring

frequently until wilted, about 10 minutes. When the vegetables show a

tendency to burn or stick, add an ounce or so of stock.

 

Add the herbs and spices. Reduce the heat slightly and add the bread crumbs,

about a cup at a time, alternately with small amounts of stock. Toss to

combine crumbs and vegetables, keeping the mixture slightly moist as you

work. If not all the crumbs will fit in the skillet, finish mixing in a

large bowl off the heat.

 

Spoon stuffing into a casserole dish and moisten with an ounce or two of

stock. Bake uncovered at 350 degrees for about 30 minutes.
