Guest guest Posted November 1, 1999 Report Share Posted November 1, 1999 * Exported from MasterCook Mac * Nutty Lentil Loaf Recipe By : Vegetarian Times Complete Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dry lentils 3 cups water 1/2 cup chopped onion 2 cloves garlic -- minced 1 tablespoon olive oil 2/3 cup chopped celery 2 eggs -- lightly beaten 2 tablespoons whole wheat flour 3/4 cup unsalted raw cashews -- chopped 1/4 cup raisins 1 teaspoon dried thyme In a medium saucepan, cook the lentils in the water until soft, about 45 minutes. Set aside. Cook the onion and garlic in the oil, stirring, until the onion is translucent. Add the carrots and celery. Simmer, covered, until the carrots are tender, about 10 to 15 minutes. Let cool. Preheat the oven to 350 degrees. In a large bowl, mix together the lentils, vegetable mixture and remaining ingredients. Spoon into an oiled loaf pan. Bake until firm, about 45 minutes.
