Made this over the weekend and we loved it! I'm not sure where I

originally got the recipe, but it probably is an old one from eat-l.

Sunshine Gingered Carrots

1 pound carrots

2 tablespoons granulated sugar

2 teaspoons cornstarch

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/2 cup orange juice

2 tablespoons butter

 

Peel carrots and slice them diagonally into 1/4 inch slices. Cook in

boiling water until tender. Drain, and keep warm. Combine sugar,

cornstarch, salt, and ginger in a saucepan. Gradually add orange juice,

stirring well. Boil 1 minute stirring constantly. Add butter, and stir

well. Pour sauce over carrots, and toss to coat.
