Spinach Quesadillas

1/4 cup butter -- 1/2 " cubes

1 cup chopped green onions

1 10 oz package frozen, chopped spinach -- thawed and drained

8 8-inch flour tortillas

6 ounces monterey jack cheese -- shredded

1/2 cup sour cream

1/4 cup salsa

 

Heat oven to 375F. Melt 2 tablespoons butter in 10-inch skillet until sizzling;

add green onions and spinach. Cook over medium heat, stirring occasionally,

until heated through and onions are softened (6 to 8 minutes).

Melt remaining butter. Brush onto one side of each tortilla.

Place 1/4 cup filling on unbuttered side of half of each tortilla; top with 3

tablespoons cheese. Fold tortilla in half.

Place on greased baking sheet. Bake for 8 minutes. Turn; continue baking for 3

minutes or until lightly browned. Cut in half.

Meanwhile, combiine sour cream and salsa in small bowl. Serve with quesadillas.
