Make and freeze extra * Exported from MasterCook * Red Rice and Mushroom Pancakes Recipe By :Victoria Simister Serving Size : 4 Preparation Time :0:00 Categories : Easy Rice Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 ounces red Camargue rice or Wehani rice 4 tablespoons olive oil -- divided 10 5/8 ounces sliced mushrooms 2 onions -- finely chopped 3/4 cup all-purpose flour 3/8 cup milk 3/8 cup cream 2 large eggs 1/2 teaspoon grated nutmeg 2 cloves garlic -- crushed 2 cups plum tomatoes -- roughly chopped 1/2 teaspoon sugar 2 tablespoons chopped fresh basil salt and black pepper Cook the rice according to the directions on the package. Drain. Meanwhile, in a pan, heat 1 tablespoon of the oil, add the mushrooms and half the onions and cook for 8 minutes, stirring. In a bowl, whisk together flour, milk, cream, eggs and nutmeg. Season. Stir in the mushroom mixture and rice. Heat 1 tablespoons of oil in a pan, add the remaining onion and garlic and cook for 3 minutes. Add the tomatoes and sugar. Bring to the boil and simmer for 10 minutes. Heat remaining oil in a fry pan. Spoon in 4 tablespoons of pancake mixture and cook for 2 to 3 minutes on each side. Repeat to make eight in total. Garnish with basil. Serve with the sauce and salad. Variation: Omit the tomato sauce and serve with highly seasoned sauteed onions and/or chutney. Description: " Can be frozen for up to 2 months.
