Guest guest Posted November 2, 1999 Report Share Posted November 2, 1999 Bulgur salad with tahini dressing. salad has blanched limas and radicchio * Exported from MasterCook * Bulgur Wheat Salad with Tahini Dressing Recipe By :Victoria Simister Serving Size : 4 Preparation Time :0:15 Categories : Easy Grains Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALAD: 8 7/8 ounces bulgur 2 1/8 cups boiling water 8 7/8 ounces frozen baby lima beans -- or other broad bean 2 5/8 ounces radicchio -- shredded 1 small red onion -- finely chopped 2 celery stalks -- chopped 2 5/8 tablespoons fresh mint -- chopped 1 3/4 tablespoons pumpkin seeds -- toasted DRESSING: 2 tablespoons tahini (sesame paste) 1 tablespoon white wine vinegar 5 tablespoons olive oil 1/2 teaspoon sugar salt and black pepper pita bread round (optional) -- to serve Put bulgur in a large bowl and pour over the boiling water. Stir and leave to stand for about 30 minutes until all the water has been absorbed. Meanwhile, add the broad beans and radicchio to a pan of boiling water and blanch for 3 to 4 minutes. Drain and cool under cold water, then stir into the bulgur wheat. To make the dressing, mix together the tahini, vinegar, olive oil, sugar and seasoning. Add the onion, celery and mint to the bulgur wheat,m pour over the dressing and mix thoroughly. Sprinkle the pumpkin seeds over and serve with warm pita bread.
