Guest guest Posted November 5, 1999 Report Share Posted November 5, 1999 * Exported from MasterCook * Spinach Pie Recipe By :Debra Wasserman and Charles Stahler, Meatless Meals for Working People Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pre-made pie crust 1 1/2 cups spinach (fresh or frozen) 3 cloves garlic -- minced 1 1/2 cups onions -- chopped 1/3 cup oil 3 cups mozzarella cheese OR tofu -- crumbled 1 tablespoon lemon juice salt and pepper to taste Cook spinach. Saute onions and garlic in oil. Add spinach, lemon juice, and cheese or tofu. Cook 5 minutes. Pour into pie crust. Bake at 350 degrees for 15-20 minutes until crust is brown. - - - - - - - - - - - - - - - - - - - Per serving: 94 Calories (kcal); 9g Total Fat; (85% calories from fat); trace Protein; 3g Carbohydrate; 0mg Cholesterol; 1mg Sodium Food Exchanges: 0 Grain(Starch); 0 Lean Meat; 1/2 Vegetable; 0 Fruit; 2 Fat; 0 Other Carbohydrates NOTES : I've used frozen, thawed crusts and 10 oz pkg of frozen spinach, also thawed. And I've used both mozzarella and tofu. When I used cheese, I used shredded and when tofu, I used a 10 oz pkg of silken firm tofu. Both were good. Nutr.
