Guest guest Posted November 5, 1999 Report Share Posted November 5, 1999 * Exported from MasterCook * Banana Gingerbread Muffins Recipe By :Betty Crocker Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 14.5 oz package Betty Crocker gingerbread cake and cookie mix 1 cup mashed very ripe bananas (2 medium) 3/4 cup quick cooking OR old fashioned oats 3/4 cup water 2 eggs 1/2 cup dried cranberries OR dried cherries Heat oven to 375F. Grease bottoms only of 16 medium muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Mix gingerbread mix (dry) and remaining ingredients except cranberries in large bowl until well blended. Stir in berries. Divide batter evenly among muffin cups. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan.
