Guest guest Posted November 6, 1999 Report Share Posted November 6, 1999 * Exported from MasterCook Mac * Yogurt Cucumber Soup Recipe By : The Dreaded Broccoli Cookbook Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large seedless cucumber or 2 regular cucumbers -- peeled & seeded 2 scallions 1/4 cup fresh mint leaves (up to 1/2 cup) 2 cups nonfat plain yogurt juice of 1 lime 1/2 teaspoon ground cumin salt to taste chopped nuts or scallions for garnish Combine all ingredients except the garnish in a blender or food processor and blend until you've achieved the consistency you like. Chill thoroughly. Stir well and taste before serving. You may need more mint leaves, lime or salt.
