Yogurt Cucumber Soup

1 large seedless cucumber

or 2 regular cucumbers -- peeled & seeded

2 scallions

1/4 cup fresh mint leaves (up to 1/2 cup)

2 cups nonfat plain yogurt

juice of 1 lime

1/2 teaspoon ground cumin

salt to taste

chopped nuts or scallions for garnish

 

Combine all ingredients except the garnish in a blender or food processor

and blend until you've achieved the consistency you like. Chill thoroughly.

Stir well and taste before serving. You may need more mint leaves, lime or

salt. Sprinkle with nuts or scallions if desired.
