Golden Walnut Couscous Salad

1/2 cup chopped walnuts

1 1/4 cups water

1 cup uncooked couscous

2 teaspoons ground cumin

1/2 cup fresh orange juice

1/4 cup seasoned rice wine vinegar

1 small yellow bell pepper -- seeded and diced

1/2 cucumber -- peeled halved

lengthwise, seeded thinly sliced

1/2 cup sliced radishes

Salt

2 cups spinach leaves

 

Heat walnuts in dry skillet over medium-high heat for 1 to 2 minutes, or until

slightly toasted.

 

In covered 2-quart saucepan over high heat, bring water to a boil, stiring

couscous and cumin. Cover and remove from heat. Let stand for 5 minutes, or

until liquid is absorbed. Fluff with a fork. Chill for 15 minutes.

 

Stir orange juice; vinegar, yellow pepper, cucumber, radishes and walnuts into

couscous. Season with salt to taste. Serve on bed of spinach. Serves
