Guest guest Posted November 8, 1999 Report Share Posted November 8, 1999 * Exported from MasterCook * Eggflower Soup with Pasta Shells Recipe By :Mollie Katzen's Vegetable Heaven Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 cups water 2 tablespoons Roasted Garlic Paste 1 tablespoon peanut OR canola oil 3 tablespoons minced fresh garlic 1 1/2 teaspoons salt (maybe more, to taste) 1 cup uncooked small pasta shells 2 large eggs black pepper to taste 2 teaspoons soy sauce 1 tablespoon Chinese sesame oil 3 tablespoons balsamic OR cider vinegar (or 4 tablespoons) 1/4 pound firm tofu -- cut into small cubes minced fresh scallions for the top Place 1 to 2 cups of the water in a blender with the Roasted Garlic Paste, and puree until smooth. Set aside. Heat the peanut oil in a soup pot or Dutch oven. Add the fresh garlic and 1/8 teaspoon of the salt, and saute over medium-low heat for about 8 to 10 minutes, or uuntil the garlic is aromatic, but not yet turning brown. Add the Roasted Garlic Paste mixture to the saute, along with the remaining water and rest of the salt. Bring to a boil, then lower the heat to a simmer. Partially cover, and cook for about 20 minutes. At this point, the soup can rest until just before serving time. Shortly before serving, bring the soup to a rolling boil. Add the pasta, and cook until it is just tender. Reduce the heat to simmer. Beat the eggs well in a small bowl, and drizzle them into the simmering soup, stirring as you drizzle. (They will " blossom " upon contact with the hot soup; hence, the name.) Stir in all the remaining ingredients except the scallions, and let it simmer about 5 minutes longer.
