Guest guest Posted November 8, 1999 Report Share Posted November 8, 1999 * Exported from MasterCook * Vegetarian Bean Burrito Recipe By :Land O Lakes Fast Scratch Vegetarian Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup water 1 1 to 1 1/2 oz pkg fajita seasoning mix 1 medium onion -- thinly sliced 1 15 1/2 oz can pinto beans -- rinsed and drained 1 15 oz can black beans -- rinsed and drained 1 11 oz can whole kernal corn with green and red peppers 6 10-inch Southwestern-style garden vegetable flour tortillas -- warmed TOPPINGS 3 ounces hot pepper Monterey Jack cheese -- shredded shredded lettuce salsa sour cream Combine water and fajita seasoning mix in 10-inch skillet. Cook over medium heat until mixture comes to a full boil (2 to 3 minutes). Add onion; continue cooking, stirring occasionally, until onion is softened (5 to 6 minutes). Add beans and corn. Continue cooking, stirring occasionally, until heated through (3 to 4 minutes). Remove from heat. To assemble burritos, place about 3/4 cup bean mixture on half of each tortilla. Top with 2 tablespoons cheese. Fold one side of tortilla toward center. Fold two adjacent sides toward center over filling. Top with desired toppings. Repeat with remaining bean mixture, tortillas and toppings.
