Roasted Green Beans

3 pounds haricots verts or other thin green beans

1 1/2 tablespoons olive oil

 

Preheat the oven to 375 degrees.

 

Toss beans with oil and salt to taste. Roast in two large shallow baking pans

in the upper and lower thirds of the oven, switching position of pans halfway

and stirring occasionally, until spotted here and there with dark brown and

thinner beans are crips, 45 to 55 minutes total, depending on the size of the

beans. Season with salt.

 

Serve beans immediately as finger food.
