Basic Soyburgers

1 1/2 cups cooked soybeans (1 15 oz can, rinsed and

drained)

1/2 cup mashed tofu

1 teaspoon salt

2 large cloves garlic

2 minced scallions

1 handful parsley

2 or 3 tablespoons minced fresh dill OR 2 teaspoons dried

2 tablespoons cider vinegar

2 teaspoons dry mustard

2 cups fine bread crumbs OR cooked short-grain

brown rice

vegetable oil for the pan

 

Place everything except the bread crumbs (or rice) and cooking oil in a food

processor and puree until fairly smooth.

Transfer to a bowl, and add the crumbs or rice. Stir until well combined.

Form into patties about 4 inches in diameter and 1/2 inch thick, using about 1/2

cup mixture for each patty.

Heat a heavy nonstick skillet and brush with oil. When the pan is hot, add the

burgers, turn the heat down to medium, and cook for about 10 minutes on each

side. Watch them carefully so they get nice and brown, but don't burn.

Serve hot, in burger style.
