Guest guest Posted November 9, 1999 Report Share Posted November 9, 1999 * Exported from MasterCook * Jicama and Cilantro Relish Recipe By :Gourmet, November, 1999 Serving Size : 0 Preparation Time :0:00 Categories : Gourmet & Bon Appetit Sheryl D Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup fresh cilantro sprigs 1 tablespoon chopped fresh mint 1 large jalapeno -- seeded and finely ch 1 teaspoon sugar 3 tablespoons fresh lime juice or to taste 2 pounds jicama -- peeled and cut into 1/4 teaspoon salt Pulse cilantro, mint, jalapeno, sugar and 3 tbsp lime juice in a food processor until cilantro is finely chopped. Add half of jicama and pulse until the jicama is very coarsely chopped. Transfer to a bowl. Pulse the remaining jicama int he food processor in the same manner and add to the relish with salt an dlime juice to taste. Chill well, about 2 hours.
