www.whitewave.com has a bunch of tofu recipes that are real frustrating

because you can't copy and paste them but have to save them as a graphic.

Grrrrrrr.

Almond Tofu Stir Fry

Amount Measure Ingredient -- Preparation Method

***MARINADE***

1/2 cup soy sauce

2 tablespoons peanut butter

1/4 teaspoon garlic powder

1 teaspoon onion powder

1 pound White Wave tofu -- cut in 1/2 " cubes,

2 tablespoons oil

1 bell pepper

1/2 teaspoon ginger powder

6 scallions

3 stalks celery

8 ounces water chestnuts

2 cups cold water

1/3 cup soy sauce

2 1/4 tablespoons corn starch

1/2 cup roasted almond slivers

 

Add tofu, cut in 1/2 " cubes to marinade, and marinate for 30 minutes.

 

Chop and saute in oil until tender, bell pepper through water chestnuts.

 

Blend together the cold water, soy sauce and corn starch for sauce.

 

Add sauce to sauted veggies and simmer. Add tofu and marinade. Simmer

Until thick. Stir in roasted almonds and serve immediately over noodles or

rice.

Garden Stir Fry

Amount Measure Ingredient -- Preparation Method

2 tablespoons oil

1 pound White Wave Tofu -- cut in 1 " cubes

2 cups water

2 1/4 tablespoons cornstarch

1/3 cup soy sauce

2 tablespoons oil

2 onions -- sliced thin

1 cup mushrooms -- sliced

1 cup walnut halves

2 cups broccoli tops

2 carrots -- sliced thin

 

Lightly brown tofu in 2 tablespoons oil. Blend water, corn starch, and soy

sauce and set aside.

 

Saute onions over medium heat in 2 tablespoons oil. When onions are clear,

add remaining ingredients.

 

Increase heat to medium high. Stir and add tofu end blended sauce.

Continue cooking until hot (5-7 minutes). Serve over fresh pasta or rice.

Tofu Enchiladas

28 ounces canned tomato sauce

1 1/2 tablespoons garlic powder

1 medium chopped onion

2 ounces diced green chilis

4 teaspoons chili powder

1/4 teaspoon basil

1 pound White Wave firm tofu

drained and crumbled

1/2 cup grated Mozzarella cheese

(dairy or nondairy alternative)

1/2 cup grated Cheddar cheese

(dairy or nondairy alternative)

1/4 cup cheese bread -- about

2 ounces sliced olives

 

Serves 4-6

 

Combine tomato sauce through basil in a saucepan and simmer 15 minutes.

 

Mix remaining ingredients together in a separate bowl.

 

Warm 9-12 small corn tortillas until soft (microwaved or lightly fried in

oil). Place tofu/cheese mixture in tortillas, rolling tightly and place in

9'x13 " baking pan, seam sides down. Cover with sauce sprinkle with more

cheese and sliced olives. Bake covered at 350 for 15 to 20 minutes .

Kathleen,

 

I don't know what browser you are using, but if it is Internet Explorer you

should be able to save the page as a text document and then do your cutting

and pasting from there.

 

Thanks for the great recipes the Enchiladas are tonight's dinner.
