Grrrrrrr. Chop and saute in oil until tender, bell pepper through water chestnuts. Blend together the cold water, soy sauce and corn starch for sauce. Add sauce to sauted veggies and simmer. Add tofu and marinade. Simmer Until thick. Blend water, corn starch, and soy sauce and set aside. Saute onions over medium heat in 2 tablespoons oil. When onions are clear, add remaining ingredients. Increase heat to medium high. Stir and add tofu end blended sauce. Continue cooking until hot (5-7 minutes). Serve over fresh pasta or rice. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Tofu Enchiladas Recipe By : www.whitewave.com 10/99 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 28 ounces canned tomato sauce 1 1/2 tablespoons garlic powder 1 medium chopped onion 2 ounces diced green chilis 4 teaspoons chili powder 1/4 teaspoon basil 1 pound White Wave firm tofu drained and crumbled 1/2 cup grated Mozzarella cheese (dairy or nondairy alternative) 1/2 cup grated Cheddar cheese (dairy or nondairy alternative) 1/4 cup cheese bread -- about 2 ounces sliced olives Serves 4-6 Combine tomato sauce through basil in a saucepan and simmer 15 minutes. Mix remaining ingredients together in a separate bowl. Warm 9-12 small corn tortillas until soft (microwaved or lightly fried in oil). Place tofu/cheese mixture in tortillas, rolling tightly and place in 9'x13 " baking pan, seam sides down. Cover with sauce sprinkle with more cheese and sliced olives.
