Crunchy Sweet Potato Casserole

Amount Measure Ingredient -- Preparation Method

2 cups mashed sweet potatoes

1/2 cup butter or margarine -- melted

1/4 cup sugar

1/4 cup packed brown sugar

2 eggs -- beaten

1/2 cup milk

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Topping:

1 cup crushed cornflakes

1/2 cup chopped walnuts

1/4 cup packed brown sugar

1/4 cup butter or margarine

 

In a large bowl, combine the first eight ingredients and mix well. Spoon into a

greased 1 1/2-quart baking dish. Bake, uncovered, at 375 degrees for 20 minutes.

 

Combine topping ingredients; sprinkle over potatoes. Return to the oven for 5 to

10 minutes, or until the topping is lightly browned.
