Guest guest Posted November 10, 1999 Report Share Posted November 10, 1999 * Exported from MasterCook * Crunchy Sweet Potato Casserole Recipe By : Virginia Slater, Taste of Homes Field Editor Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Casseroles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups mashed sweet potatoes 1/2 cup butter or margarine -- melted 1/4 cup sugar 1/4 cup packed brown sugar 2 eggs -- beaten 1/2 cup milk 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Topping: 1 cup crushed cornflakes 1/2 cup chopped walnuts 1/4 cup packed brown sugar 1/4 cup butter or margarine In a large bowl, combine the first eight ingredients and mix well. Spoon into a greased 1 1/2-quart baking dish. Bake, uncovered, at 375 degrees for 20 minutes. Combine topping ingredients; sprinkle over potatoes.
