Guest guest Posted November 10, 1999 Report Share Posted November 10, 1999 * Exported from MasterCook * Green Herb Rice Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Rice Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 1/2 cups chopped onion 1 small bay leaf 2 cups long grain rice 4 cups vegetable stock 1 cup coarsely chopped herbs (such as 1/2 cup -- parsley 1/3 cup dill, 3 tbls tarragon) Zest of 1 lemon 1/2 teaspoon black pepper Heat the olive oil in a large saucepan, add the onions and sauté for about 8 minutes until soft. Add the bay leaf and rice and cook for one minute, stirring. Pour in the stock, bring to a boil, then reduce heat to low. Cover and cook 15 minutes. Stir in the herbs, lemon zest and pepper.
