Homemade Noodles

1 1/4 cups flour

3 eggs

2 tablespoons water

 

 

Mix flour and 1 egg in a food processor. Add remaining eggs and 2 tablespoons

water. Process until smooth and and dough forms a ball. Knead by hand on floured

board until dough is smooth. " Kneading is the most important part. If dough is

wrong texture it will be unworkable, " advised Betty Balogh.

 

Cut into 4 small balls and roll each ball in a pasta machine. " I don't know of

too many people who roll by hand, " said Balogh. " Pasta machines are very

inexpensive. We use those metal hand-operated ones. "

 

After the machine rolls into strips, roll again into a 20-by-25-inch rectangle

about 1/8 inch thick. Cut into 1-inch squares for noodles or use pasta cutters

for shapes. Dry overnight on lightly floured board.
