Guest guest Posted November 10, 1999 Report Share Posted November 10, 1999 * Exported from MasterCook * Spicy Coleslaw Recipe By : Cooking With Patrick Clark Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups green cabbage -- shredded 1 cup jicama -- julienned Salt and freshly ground pepper 2 cloves garlic -- sliced 10 black peppercorns 3 1/4 inch fresh ginger -- peeled, sliced 1/2 I 1 1/2 cups carrots -- julienned 1 sweet onion -- julienned 1 cup cider vinegar 3 shallots -- chopped 1 jalapeno pepper -- sliced 1 cup olive oil Combine the cabbage, carrots, jicama, and onion in a large bowl and season lightly with salt and pepper. Combine the vinegar, garlic, shallots, peppercorns, jalapeño, and ginger in a saucepan and simmer for 5 minutes. Remove from the heat and let cool. Strain through a fine-mesh sieve and whisk in the olive oil. Pour the liquid over the cabbage mixture and toss well.
