Guest guest Posted November 10, 1999 Report Share Posted November 10, 1999 * Exported from MasterCook * Spinach Soup Recipe By : " A Taste of Bulgaria " Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Ethnic Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- chopped 1 bag fresh spinach (or 2 boxes frozen) 6 cups water 1/4 cup rice 1 egg -- beaten 12 ounces sour cream or yogurt Lemon juice Salt Pepper Clean spinach and break into small pieces. Season with salt, pepper and lots of paprika. Add water. Bring to boil and add rice. Boil until rice cooks. Turn off heat. Add sour cream to the beaten egg. Put small amount of soup in this sour cream mixture at a time until it is about the same temperature as the soup. Pour this mixture into the soup. Flavor with lemon juice.
