Parmesan Vinaigrette Salad Dressing

1 cup olive oil

2 tablespoons balsamic vinegar

2 tablespoons wine vinegar -- (2 to 3)

1 clove garlic -- crushed

2 teaspoons grated Parmesan cheese

Salt and pepper to taste

 

 

Using a jar with a tight-fitting lid or a deep bowl, combine the crushed garlic,

Parmesan cheese and salt and pepper. Pour in the vinegar; slowly pour in the

olive oil while whisking continuously or, if using the jar, shake until

ingredients are blended.

 

Use immediately or refrigerate.

 

Makes approximately 1 1/4 cups.
