Broccoli with Ginger

Amount Measure Ingredient -- Preparation Method

1 clove garlic -- minced

piece fresh ginger root -- 1/2 inch; grated

2 teaspoons vegetable oil

1 pound broccoli -- cut into florets

1 medium leek -- thinly sliced

- white part only

2 tablespoons vegetable stock

1 teaspoon tamari soy sauce

 

Saute ginger and garlic in oil for 1 minute. Add the broccoli,leek,

and stock. Toss together. Cover the pan and cook for 3 minutes.

Remove the cover and continue to saute until the vegetables are just

tender, about 10 minutes. Mix in the tamari and serve immediately.

Deviled Black Beans

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 teaspoons olive oil

1 teaspoon chili oil

1 large red onion -- thinly sliced

1 3/4 cups vegetable stock

2 cans black beans -- drained

4 ounces mild green chiles -- diced

2 teaspoons prepared mustard

1 tablespoon cornstarch

salt and pepper -- to taste

 

Saute the onion in the oil until very well browned.

 

Set aside 1/4 cup of the stock. Add the remaining stock, beans,

chilies, mustard, and seasonings. Heat to boiling.

 

Stir the cornstarch into the reserved broth. add the mixture to the

beans, and cook until the sauce is clear and thickened, about 5

minutes.

 

Serve over cooked grain of your choice.
