Sweet and Sour Seitan

Amount Measure Ingredient -- Preparation Method

1 pound cooked seitan -- sliced or cut in strips

1 cup onion -- sliced in 1/2 inch thick wedges

1/2 cup fresh shiitake mushrooms -- sliced

1/2 cup carrot -- sliced in matchsticks

1 cup broccoli florets

1/2 cup mung bean sprouts -- washed

light sesame oil

4 cups water

2 tablespoons tamari soy sauce

1/2 cup brown rice syrup

3 to 4 tablespoons brown rice vinegar

2 tablespoons kuzu, diluted

 

Heat a small amount of oil and saute the onion for 1 minute. Add the shiitake

and saute 2 to 3 minutes. Add the water and carrot. Cover and bring to a boil.

Reduce the flame to medium-low and simmer 1 to 2 minutes. Add the broccoli,

cover, and simmer 1 minute. Add the sprouts and thicken with kuzu, stirring

constantly. Add the soy sauce, rice syrup, and vinegar. Simmer, uncovered, 2

to 3 minutes. Serve over rice, millet, barley, or noodles.
