Tofu Stuffed Shells

12 large whole wheat stuffing shells -- cooked al dente

1 pound firm tofu, ground in a hand food mill

3 tablespoons onion -- finely grated

1 teaspoon sesame oil

1/2 cup green string beans -- sliced very thin

1/2 cup sweet corn, removed from the cob

1 tablespoon umeboshi vinegar

2 teaspoons tamari soy sauce

 

Heat the oil in a skillet. Add the string beans and corn. Saute for 2 to 3

minutes. Remove and place in a mixing bowl. Place the tofu, onion, parsley,

vinegar, and soy sauce in the mixing bowl and mix thoroughly.Stuff each shell

with tofu stuffing and place in a baking or casserole dish. Prepare sauce.

NOTES : I used a potato ricer instead of grinding the tofu, but think rough

mashing would work. I also used frozen vegetables instead of fresh. And I used

balsamic vinegar.
