FRUIT CRISP

Amount Measure Ingredient -- Preparation Method

1 quart fruit, any type

1/3 cup honey

1 teaspoon vanilla extract

1 teaspoon coriander, optional

4 tablespoons cornstarch or tapioca starch

4 tablespoons water

 

TOPPING:

2 cups quick oats -- uncooked

1 cup unsweetened coconut

3/4 cup walnuts -- chopped

3 tablespoons honey

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup water

 

Put fruit into a pot and cook until soft, then add honey, vanilla, and

coriander. In a small bowl mix cornstarch and water and pour into the

hot fruit

stirring to prevent lumps. Cook until thickened, pour into a baking

dish and

set aside. Make topping.

 

TOPPING: Combine in a bowl oats, coconut, and walnuts. Set aside. In

another

bowl mix together honey, vanilla, salt, and water. Pour liquid into the

oat

mixture and toss together lightly. Sprinkle oat topping over cooked

fruit.

Bake at 350 degrees for 20 - 30 minutes or until light brown on top.

Serves

approximately 2 people.

NOTES : For lower fat: Leave out the walnuts and coconut.

 

FROM DEANNE: I have made this with strawberries, leaving out the

coriander;

with blueberries, also leaving out the coriander, but with a sprinkle of

cinnamon; and with apples, using cinnamon instead of coriander. It came

out

delicious every time. You can use maple syrup instead of the honey.

 

This is supposed to be a breakfast dish, but I think it's yummy enough

to be

like a dessert. It's reminiscent of a fruit cobbler.
