We actually have this for lunch or dinner sometimes. :-) Deanne * Exported from MasterCook * OATMEAL BANANA SPLIT Recipe By : The Real Food Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Breakfast Cereal Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 1/4 teaspoon salt 1 cup oats, rolled (raw) 1 banana, ripe 1 cup strawberries, fresh or frozen -- (or any other fruit) 2 tablespoons honey or fruit source or maple syrup 1 teaspoon vanilla extract 1 tablespoon cornstarch or tapioca starch 1 tablespoon water Boil 2 cups water and salt together, then stir in oats. Cook until very thick--thick enough to hold shape. Set aside. Split banana down the middle lengthwise, and place in a dish end to end (to form an oval shape). Place two ice cream scoops of cooked oatmeal in the middle of the split bananas. Set aside and make strawberry sauce. In a saucepan, cook fruit. Add honey and vanilla. In a small bowl, mix together cornstarch and 1 tablespoon of water. Stir into hot fruit. Cook until thickened. Pour hot sauce over banana and oatmeal.
