I'm not sure this one would be good for a brunch, but it's one of our

favorite

breakfast recipes. We actually have this for lunch or dinner

sometimes. :-)

Serving Size : 1 Preparation Time :0:00

Categories : Breakfast Cereal

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups water

1/4 teaspoon salt

1 cup oats, rolled (raw)

1 banana, ripe

1 cup strawberries, fresh or frozen -- (or any other

fruit)

2 tablespoons honey or fruit source or maple syrup

1 teaspoon vanilla extract

1 tablespoon cornstarch or tapioca starch

1 tablespoon water

Boil 2 cups water and salt together, then stir in oats. Cook until very

thick--thick enough to hold shape. Set aside. Split banana down the

middle

lengthwise, and place in a dish end to end (to form an oval shape).

Place two

ice cream scoops of cooked oatmeal in the middle of the split bananas.

Set

aside and make strawberry sauce.

In a saucepan, cook fruit. Add honey and vanilla. In a small bowl, mix

together cornstarch and 1 tablespoon of water. Stir into hot fruit.

Cook until

thickened. Pour hot sauce over banana and oatmeal. Top with a sprinkle

of

unsweetened coconut.
