Add carrots, potatoes, and onions. Add seasoning. Sauté until browned on one side. Flip over and sauté on second side until browned. Break apart into small chunks, or serve in wedges cut from the round. Serves 3. - - - - - - - - - - - - - - - - - - NOTES : From me: I usually use olive oil spray instead of the oil. I usually shred the potatoes and carrots in the food processor. We like fewer carrots and more potatoes. I usually use 5 or 6 potatoes and only 1 or 2 carrots. I put all the " shreds " into a big bowl and mix it up, adding seasonings that we like: garlic, a sprinkle of pepper, sometimes a sprinkle or paprika or cayenne (only a tiny bit--less than a pinch). You could add whatever appealed to you. Most often, I sprinkle in a bit of garlic powder and onion powder and that's it. I like to make these using the flat side of my waffle iron. It browns them on both sides at the same time and also " squishes " the cake flatter. We like it this way, but cooked in a frying pan is good, too.
