Apple Cake

2 cups sugar

1 1/2 cups oil

3 eggs

1/2 tsp. vanilla

3 cups flour

1 tsp. soda

1 tsp. baking powder

1 tsp. cinnamon (scant)

1/2 tsp. salt

1 cup nuts

1 cup coconut

3 cups apples -- raw, diced

 

Beat sugar, oil, eggs, and vanilla until creamy. Sift flour and add

remaining dry ingredients. Fold flour mixture into creamed mixture. Add

nuts and coconut. Fold apples carefully into mixture. Bake in a bundt pan

for 1 1/2 hours at 350 degrees.
