Guest guest Posted November 11, 1999 Report Share Posted November 11, 1999 * Exported from MasterCook * Corn Tofu Casserole Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 green pepper -- chopped 1 cup onion -- sliced 1/2 cup water 1 Tbsp. garlic -- minced 1/2 cup cornmeal 1/4 cup sunflower seeds or nuts 4 cups corn -- fresh or frozen 1 cup tofu 1/4 cup lemon juice 1 Tbsp. flake food yeast 1 tsp. sage 1/2 tsp. salt 1/2 tsp. turmeric 1/4 tsp. cumin -- ground Steam pepper, onion, and garlic in part of the water until it is limp. Mash tofu and mix in corn meal and steamed ingredients. Blend sunflower seeds or nuts with lemon juice and a little water if needed. Add seasonings and corn and stir well. Bake at 375 degrees for 30 minutes.
